What is Pressure Canning?
Pressure canning is a method for preserving low-acid foods by heating them in sealed jars to 240°F using pressurized steam. This high temperature is essential to destroy harmful bacteria — including Clostridium botulinum, the cause of botulism — which cannot be killed through regular boiling or steam canning. The result? A vacuum-sealed jar that keeps your food shelf-stable and safe for months to come.
